Giselle Varsos is originally a French Canadian, Tadoussac her home town. She left Montreal for a couple of weeks surfing in Florida, met Buddha, and never left. She is the "G" in the B&G's Surf Shop. The two are married and have kids, although the children have moved on with families of their own. She holds a Registered Nurse license and works as an OB-GYN nurse an as needed to help out on the cash flow.

Giselle is described as "tall and lean and lanky in tight jeans and a T-shirt, her long blonde hair in a braid hanging down". ^BB10 She is in her mid forties in 2000 but despite the strong tan from many years of life on a Florida beach, she still could be mistaken for a twenty year old.

She is an accomplished surfer herself, first learning from Buddha, but Buddha thinks she's now the better of the two of them. She is a good teacher, quickly straightening out Trey Hartwell after a few years of rust.

Giselle's first language is Canadian French and she knew little English when she first moved south. Her cooking style is strongly French and usually oriented towards seafood, such as grilled snapper for Christmas dinner. She can rival Blake Walworth as a gourmet cook.
